After dining out and ordering Chicken Marsala for the first time, I couldn’t resist trying out this fast and easy recipe at home. Delicious classic chicken breasts coated in Marsala wine and mushrooms.
• 1/4 cup all-purpose flour for coating
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1/2 teaspoon dried oregano
• 4 tablespoons butter
• 4 tablespoons olive oil
• 1 cup sliced mushrooms
• 1/2 cup Marsala wine
• 1/4 cup cooking sherry
Directions
1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
2. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear

What’s Up with High U.S. Egg Prices?
As someone who eats plenty of eggs, the higher prices have not slipped my attention. If you have been grocery shopping recently, or even checked social media, it’s pretty obvious that egg prices are soaring. According to the Bureau of Labor Statistics, the average price of a dozen eggs rose 59% last year with prices more than doubling in West Virginia and six other states in the upper Midwest. This jump in price was even more shocking in the case of eggs classified grade A, with prices soaring up to almost 140%.
