When I visited family in Peru for the first time as a curious child, I was immediately taken with the bold, vibrant flavors that defied everything my little American-raised brain knew about food. 20 years later, I proudly maintain that Peruvian food is among the best there is, and I firmly believe that everyone should try it at least once in their life.
