Why Eggplant Is the Best Vegetable

No, get your mind out of the gutter — I’m not referring to the classic purple emoji. What we are talking about is the greatest vegetable known to men and women. A vegetable that has stood the test of time amidst the countless changes of appearance. No matter if one deems it as a fruit — it has the rich components of antioxidants, fiber and vitamins.

This creates a slightly sweet yet mild, earthy flavor that warms your mouth. So to all my readers — yes, Eggplant is the greatest vegetable in the world and it is no contest.

The Perfect Substitute

Foremost, eggplant is the perfect meat substitute for a vegan dish. It might be the closest vegetable that tastes like protein. Growing up as a kid, my family used to cook Eggplant Parmesan every Sunday evening. The bitter taste flowed so well with the mozzarella and Italian seasoning marinara sauce to create a multifaceted dish. Those childhood dinners had me hooked ever since.

Health

Plus, eggplant is low in calories and high in fiber. Which means that the vegetable is perfect for weight management. As mentioned before, eggplant contains vitamin C, which helps reduce the risk of heart disease and specific cancers. The vegetable also has calcium and potassium which can maintain strong bone health. It is also the beacon of healthy digestion, so if you have to go to the bathroom but can’t relieve yourself, then always eat an eggplant to get rid of that terrible constipation.

So frankly, the plant species is the best to eat. A life hack for y’all: use alfredo sauce over eggplant. It’s definitely an excellent way to eat eggplant and awesomely scrumptious. Just an FYI to show you the greatness and versatility of eggplant.

P.S. No disrespect intended to my boy, Fred the Eggplant from Veggie Tales. You are loved until eaten.
